Top with the remaining two cups of chips, then sprinkle with the 1/2 cup shredded cheese. Bake for another five minutes and serve! Best when served still warm and gooey.

Caribbean Pork Roast
Submitted by Carol from Everett, MA

Ingredients:
1 jar Caribbean salsa per 3 lbs. pork roast
yellow squash
2 tablespoons brown sugar
2 tablespoons butter
white rice
cilantro and red onion for garnish

Directions:
Place pork roast in a covered baking dish wish salsa poured over it. Bake at 375 degrees for 20 minutes per pound or until meat thermometer registers at least 160 degrees. Let cook covered! Chop 1/2 to 1 pound of yellow squash into approximately 1 to 2 inch pieces. Place squash with 1 cup chicken broth, 2 tablespoons brown sugar, and 2 tablespoons butter in another covered dish. Bake alongside for the last 1/2 hour. Serve with white rice and garnish with chopped cilantro and diced red onion for extra zing! This recipe can be easily adapted for crockpot cooking.

Sweet & Spicy Chicken Burgers
Submitted by Rina from Columbia, SC

Ingredients:
Ground Chicken
Caribbean Salsa
Habanero Salsa

Directions:
Use ground chicken instead of ground beef to make "healthier" sweet & spicy burgers! Just add 2 tablespoons of Caribbean and 1 teaspoon of Habanero salsa for each patty. Make sure the salsa is mixed in to the chicken really well. Form into patties. They are best grilled, although they can be cooked on the stove. Excellent on a whole grain bun, served with homemade sweet potato fries!

Chicken Salsa Pizza

Ingredients:
Bobboli pizza shell
1 jar Just Peachy Salsa
Shredded cheese (Mozerella & Cheddar works best)
Bonless chicken breast

Directions:
Empty the jar of Just Peachy Salsa onto the pizza shell. Spread evenly. Top with shredded cheese. Grill the chicken breast in a skillet, as per your liking. Chop and place cooked chicken on pizza. Bake in oven at 350 degrees for 15 minutes or until golden brown. Share and enjoy!

Salsa Meatloaf

Mix in one half jar mild or medium salsa in with your favorite meatloaf recipe. Place remaining half of jar on top along with cheese of your choice and bake according to your meatloaf recipe directions.

Salsa Chicken or Fish

Spread chicken or fish with Just Peachy salsa in a covered casserole dish and cook in the oven for 45 minutes at 350 degrees.

Additional Serving Suggestions

Salsa is so much more than a dip for chips or a topping on nachos! Try it on top of a baked potato, stirred into chili, on spagetti or noodles, on a burger, or as a dipping sauce for chicken nuggets. If you can put something on it or dip it in something, try it with salsa!
